What Is Gluten?
Gluten is a protein in certain grains that gives dough elasticity and structure. I’ll explain gluten and where it’s commonly found in our food supply.
Defining Gluten
Gluten is made up of two main proteins: gliadin and glutenin. These proteins work together to form the gluten complex. When flour is mixed with water, gluten develops, creating a sticky network that gives bread a chewy texture.
For most people, gluten is harmless. But for those with celiac disease or gluten sensitivity, it can cause health issues. That’s why it’s important to understand what gluten is and where it lurks in our diets.
Sources of Gluten
I find gluten in many common grains and foods. The main sources are:
- Wheat (including varieties like spelt, kamut, farro, and durum)
- Barley
- Rye
- Triticale (a hybrid of wheat and rye)
Gluten hides in many processed foods, too. I often spot it in:
- Bread, pasta, and baked goods
- Cereals and granola
- Beer and some alcoholic beverages
- Sauces, dressings, and gravies
- Processed meats and imitation seafood
If you’re avoiding gluten, it’s crucial to read labels carefully. Many unexpected items, such as soy sauce, salad dressings, and even some medications, can contain gluten.

Avocado and Gluten
Avocados are naturally gluten-free fruits that can be safely enjoyed by those with celiac disease or gluten sensitivity. I’ll explore their nutritional profile and provide tips for identifying gluten-free foods.
Avocado Nutrition Profile
Avocados are packed with nutrients and healthy fats. I love that they’re rich in monounsaturated fats, which can help lower bad cholesterol levels. They’re also an excellent source of fiber, potassium, and vitamins K, C, and B6.
Avocados contain no gluten proteins, making them a safe and nutritious choice for people avoiding gluten. I find incorporating avocados into my gluten-free meals helpful for added creaminess and flavor.
Here’s a quick breakdown of avocado’s key nutrients (per 100g):

Identifying Gluten-Free Foods
When shopping for gluten-free products, I always check labels carefully. Many foods, like fruits, vegetables, and unprocessed meats, are naturally gluten-free. However, some processed foods may contain hidden gluten sources.
I look for “gluten-free” labels on packaged foods. In the US, this label means the product contains less than 20 parts per million of gluten. It’s important to know common gluten-containing ingredients like wheat, barley, and rye.
Cross-contamination can be an issue in food processing. When possible, I choose products made in dedicated gluten-free facilities. When dining out, I communicate my gluten-free needs clearly to the restaurant staff.
